京都大学大学院生命科学研究科統合生命科学専攻の神戸大朋准教授らは、腸管上皮細胞で亜鉛イオン（Zn+2）を細胞内に取り込むトランスポーターZIP4（SLC39A4）の発現量をみそが高めることを見いだし、みその原料である大豆の活性成分を同定した。中央味噌研究所の研究助成金による成果。神戸准教授は、みそ健康づくり委員会が2012年11月21日に都内で開催した第34回マスコミセミナーで「味噌による亜鉛欠乏予防の可能性」と題した講演を行った。同定した成分の物質名は、論文投稿中のため明かさなかった。2013年3月に仙台市で開かれる日本農芸化学会2013年度大会で、研究グループが成果の一端を発表する。
